Loving Great Grandma Cora’s Rice Pudding Recipe

My Grandma Bolinske was the first to make Grandma Cora’s Rice Pudding for me as young girl. I remember sitting in her 1960’s kitchen circular bar and falling in LOVE with it! She must have enjoyed how much I loved it because often times there was some waiting in the fridge for me when I arrived to visit. Once I was old enough to cook, she taught me how to make it just like her Grandma Cora taught her. I’ve done my part in passing it on to my kiddos too! I think I made this recipe at least once a month while they were growing up. Now that all my kiddos are grown and out of the house, I haven’t made it nearly as often. Perhaps this year we’ll celebrate our Christmas Day dinner with it for dessert! Happy Holidays!

A brief look at the history of Rice Pudding!

• The earliest rice puddingrecipes were called whitepot and date from the Tudor period; one of the earliest recipes was written down by Gervase Markham in 1615.Rice puddingis traditionally made withpudding rice, milk, cream and sugar and is sometimes flavoured with vanilla, nutmeg, jam and/or cinnamon.

• Today, rice pudding is considered a humble dessert – a simple mixture of rice with milk, sugar, and spices. But for centuries, rice pudding held a place of distinction in the royal courts of Europe. The true root of rice pudding is hard to discern – the dish can be traced to multiple culture across millennia, including ancient China, the Byzantine Empire, and ancient India, where rice was a major food source. In India, rice pudding (known askheer) is a staple food that potentially dates back as far as 6000 BCE, as it was included in the Ancient Indian diet prescribed by Ayurveda, an ancient alternative health regime.

• It’s actually been around for centuries, believe it or not, and was thought to haveoriginatedin China, which has an ancientriceculture. This has been disputed by some food historians; they argue thatrice puddinglikelyoriginatedin India, which has an ancientriceculture as well as an ancient sugar culture.

Ingredients

  • 1 cup long grain white rice
  • 4 cups water
  • 1 egg
  • 1/2 cup honey
  • 3/4 cup raisins
  • 3/4 cup milk
  • 1 1/2 teaspoons cinnamon
  • 3/4 teaspoon nutmeg
  • 1/2 teaspoon sea salt
  • 1 teaspoon vanilla

Instructions

  1. In a large pot with lid add water and rice, bring to simmer, cover and cook for 15-20 minutes or until tender.
  2. Drain rice if necessary; return to pot.
  3. In small bowl whisk egg, slowly drizzle in honey while whisking.
  4. Add egg mixture to rice; stir to incorporate.
  5. Add raisins, milk, cinnamon, nutmeg, sea salt; stir.
  6. Cook 2-3 minutes over medium high heat to thicken, add vanilla, and stir in.
  7. Portion into 6 serving glasses and refrigerate until cold.
    Serve with a dollop of whipped cream.
  8. Enjoy!
