When we eat at my favorite steak place, I can never resist ordering a twice baked potato for a side. Creamy, fluffy and loaded, they are hard to resist!

These air fryer twice baked potatoes are super simple to make and the air fryer gets them wonderfully crisp.

Topped with cheese with sour cream, bacon and green onion for one yummy bite!

How to make Twice Baked Potatoes in an Air Fryer

  1. Oil and season the potatoes and cook in the air fryer.
  2. Cut them in half and scoop out the insides.
  3. Mix the potato with the butter, cream and seasonings.
  4. Spoon back into the potato skins.
  5. Cook in the air fryer.
  6. Add cheese and melt.
  7. Top with sour cream, bacon and spring onions.

What are the best potatoes to use?

These twice baked potatoes are best made with starchy large potatoes. Russet work great and Yukon Gold or baking potatoes will do the job nicely.

It’s best not to use waxy potatoes which won’t be as fluffy.

Can you make these in the oven?

If you don’t have an air fryer, you can make these in the oven. I love that making them in the air fryer frees up my oven to make the main, and it gets them super nice and crispy, but they’ll turn out great oven baked too.

Bake the potatoes in the oven at 400F for around 60 to 70 minutes til crisp and soft. You can the place them under the broiler to brown and melt the cheese.

  • Fully pre heat the air fryer before adding the potatoes so that they cook evenly through.
  • Best served straight away, but they will keep well in the fridge for up to 4 days and can be reheated in the air fryer at 400F for 3 to 4 minutes to warm through and crisp back up.

Ingredients

  • 4 large russet potatoes scrubbed and dried
  • Olive oil
  • Kosher salt to taste
  • Cracked black pepper to taste
  • ½ cup heavy cream or milk
  • ¼ cup unsalted butter softened
  • 1 cup shredded cheese divided
  • Chopped bacon for garnish
  • Sour cream for garnish
  • Green onions for garnish (optional)

Instructions

  • Preheat air fryer to 400F.

  • Wash and scrub the potatoes, then pat dry. Use a fork to poke holes in the potato

  • Rub all sides with olive oil, salt, and pepper. Place potatoes into the air fryer basket and fry at 400 degrees F for 70 minutes, until the outside is crisp and the inside should be fork tender.

  • When potatoes are cool enough to handle, carefully cut them in half and scoop out the insides into a bowl.

  • Add butter, heavy cream, salt and pepper to taste. Use a hand mixer or potato masher to whip the potatoes until light and fluffy, adding more butter and heavy cream if desired.

  • Divide the mashed potato between the potato skins. Return to the air fryer for 4 minutes at 400 degrees F, until the tops begin to brown. Sprinkle with cheese and fry for an additional 1-2 minutes until melted.

  • Carefully transfer the baked potatoes from the air fryer to a serving plate. Top with bacon, sour cream, and green onions and serve hot.
